National Blueberry Pie Day

A long season of blueberry harvest begins in April and lasts until September. As a nation,  we have enjoyed blueberry since early Americans arrived here. The first documented blueberry pie recipe appeared in the Appledore Cook Book in 1872.

It’s one of the healthiest fruit on the market full of antioxidants that help prevent urinary tract disease and inhibit cancer development.  Eating blueberry may also help reduce blood sugar, maintain healthy blood pressure, and ease symptoms of depression.

Here’s a recipe from Allrecipes.com :

Ingredients

  • 3/4 cup white sugar
  • 3 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 4 cups fresh blueberries
  • 1 recipe pastry for a 9-inch double-crust pie
  • 1 tablespoon butter

Directions

Step 1 – Preheat oven to 375 degrees F (190 degrees C).

Step 2 – Mix sugar, cornstarch, salt and cinnamon, and sprinkle over blueberries

Step 3 – Line pie dish with one pie crust. Pour berry mixture into the crust and dot with butter. Cut remaining pastry into 1/2 – 3/4 wide strips and make lattice top. Crimp and flute edges.

Step 4 – Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown.

Per Serving: 366 calories.
